10-Minute Homemade Pizza Hero

Tonight, I became the 10-minute homemade pizza hero.

My wife was at Costco earlier today and she brought home a rotisserie chicken. For dinner, we ate chicken wraps – using lavash bread and a garlic spread from Trader Joe’s  — very traditional Lebanese sandwich. About half an hour after dinner, both my wife and son told me they still felt like eating something. Hmmm… What to do. I remembered we had some pasta sauce, flatbread and mozzarella cheese in the fridge. I asked if they wanted a homemade pizza. It was Yes and Yes.

It was so easy. I went to the fridge and pulled out the Indian Style Flat Bread, pasta sauce and the mozzarella cheese. My wife made a special request for olives on her pizza — there was only a handful, but enough to make-do. My son protested the olives. He stood right next to me, constantly reminding me not to put olives on his pizza. I explained to him, that when I was younger I did not like olives, but now I really like them. He seemed suspicious — no olives made it on his pizza.

I turned on the Breville toaster oven — the most used product in our kitchen — to 350 degrees. It is so much more convenient than using the large oven and easier to clean. 

My son wanted to help, so I gave him a spoon and had him add the pasta sauce. Then we added the cheese. Ready to go. Once the oven hit 350 degrees, I put the pizzas in the oven and set the timer for 8 minutes. While the pizzas were cooking, I sliced some olives and had them ready. I think it took less than 8 minutes, because I typically just eye how melted the cheese looks and how toasted the bread looks. I am not Gordon Ramsey.

Once the pizzas looked ready, I took them out. I placed the sliced olives on my wife’s pizza. That was it. Homemade pizza in less than 10 minutes. I took a few bites from my son’s pizza. I don’t want to toot my own horn, but TOOT TOOT. It was good.

The nice thing about opening the pasta sauce, and having an almost full bottle left over, is that I know exactly what we are going to have for dinner tomorrow night. Pasta.
